I hope you all have been having a great Easter weekend.  We were blessed with a good sunrise service this morning and rejoicing in Christ’s death and resurrection.  I wanted to share some cooking things I did this weekend:

With me being super paranoid now about all foods because of my nut allergy, I have been making some things homemade this weekend.

I made some homemade salsa yesterday and when I went to the store, I could not find any tortilla chips that had not been made with sunflower oil or coconut oil.  So, I made my own tortilla chips.

How?
1.  preheat the oven to 400.
2. put some foil on a cookie sheet, cut your corn tortillas in chip sized pieces, brush olive oil on them, and sprinkle on some salt.
3. place in the oven and cook for 6-10 minutes, until the edges curl.

they were delicious!  especially with the homemade salsa!! yum, yum!

Also, this weekend, I was making an eclair cake for Easter lunch.  This recipe calls for cool whip, and all the cool whip at food city had coconut oil in it.  So, I made my own!  It was so easy and delicious!

These homemade ingredients were cheaper, and I’m guessing that they are healthier because there isn’t anything extra added in, or at least I’m hoping so.

I’m going to go whip up another batch of chips.  Yay salsa time!
